Earth Balance is by far, my favorite buttery spread ever. No GMOs, no hydrogenated oils. Bliss!

Had a conputer meltdown this morning before I had to drop family off at the airport, before missing a deadline…
Surprisingly, I didn’t find myself much stressed at all. Perhaps a but frustrated that I had to make an unnecessary trip out to the Apple store, but that’s about it.
Stressful days should be taken in stride. Take a deep breath, mentally organize your to-do list, and do one thing at a time. it’s surprising to realize how often we forget to do these things, and let our minds spin off into chaotic anxiety. Really, if you think about it, you’re less capable of productivity if you’re so focused on wigging out. Funny how that works.
Anyway, after getting most everything done, I headed back to my parents’ to forage for any food that may spoil while they are away, and found this lovely fruit. It’s a star fruit (not exactly local), but definitely a nice pick-me-upper to remind me of my roots. Call it- comfort food.
So, I try to remind myself to be present and aware of my body and mind at all times, even when I really would rather not, like today… But to be present, allows yourself to be honest with yourself, and ultimately I think it’s one of the keys to being truly happy. At least, it makes life a whole lot less complicated!

Meet your food, from Fairview Gardens Farms in Santa Barbara, California

Had a wonderful time taking a stroll through the twelve and a half acre organic farm. I highly suggest visiting your local farm if you can. It’s wonderful to get to know your farmers, and where your food comes from… maybe even help dig up a few things for lunch!

Raw desserts are great because they ensure that you are eating actual whole foods. There are no fillers or funky preservatives in there. And they’re incredibly delicious! This is a recipe I created this weekend after craving some chocolate ice cream:
Rawkin’ Cococacao Ice Cream
Makes about 9 small servings
Ingredients
1/4c raw hazelnuts, soaked
1c raw pecans, soaked
3/4c dates
1tsp vanilla
dash of cinnamon
1/4c dried coconut flakes
1/4c raw honey
1/2c raw cacao (you can also sub carob if you don’t have cacao. If using carob, cut back on the honey and dates, as carob is much sweeter.)
dash of salt
Distilled or Spring water
Directions
1. Blend ingredients with a little water until it’s a smooth, creamy consistency (add a little water at a time so as to not get the mix too runny).
2. Pour mixture into your ice cream maker and enjoy when ready!
Alternative- You can just freeze the mixture until frozen and enjoy as well, but it wont have as fluffy as a texture.
Will keep in freezer for about 7 days. Store in an air tight container to retain flavor.
